I know during lent we can all fall into the trap of fish fries or cheese pizza on Friday. I mean…who doesn’t enjoy a good fish fry during this time of year? I know I do, but for those nights when you just want to cook something healthy, at home, clean and fast…. I got you, Boo! This simple, quick and healthy shrimp recipe will shake up your Friday night meal rotation for the win!
Before we get to the recipe, I will share with you that when my kids became ill, with ME/CFS, I ditched my traditional non-stick pans because of the harmful chemicals and switched to safer options such as stainless steele and non stick ceramic. Here are the two sets we use and love everyday…..I especially love my ceramic set. Not only are they toxic chemical free cookware, they are super easy to clean (a huge win for busy peeps like us!), but they also distribute heat evenly. Alright, now onto the main event – the shrimp dish that’ll have a delicious dinner on the table FAST! Although my Jeff is not a chef, he knocks this one out of the part park, every single time!
Jeff’s Irresistible Quick & Easy Garlic Butter Shrimp
Ingredients:
1 pound large shrimp (You can use frozen, pre-cooked shrimp to save time!)
Garlic to your taste (We use one clove.)
2 tablespoons olive oil
1/2 Stick of Butter
Salt and pepper to taste
Fresh parsley for garnish if desired
Lemon wedges for serving
Instructions:
Defrost the shrimp and pull the tails. In a large ceramic pan, heat olive oil and butter with garlic over medium heat. Sauté until butter melts and garlic is fragrant, about 1 minute. Toss in the defrosted, pre-cooked shrimp and Sautee to heat through. If using raw, divined shrimp, cook until thoroughly cooked. Add butter as needed.
Remove from heat and serve
Serving Suggestions
On it’s own with sides of your liking.
Over pasta or rice.
